An excellent post-ride recovery option. The combination of spiciness and some sweetness can be especially appealing if you sometimes struggle to eat after a long workout.
Here is what you’ll need:
- Olive oil spray
- 1 onion, chopped
- 1 tsp garlic, minced
- 1 tbsp curry powder
- 825g canned chopped tomatoes
- 125ml chicken stock
- ½ cup mango chutney
- 500g chicken fillets, cut into thin strips
- 400g sweet potato, cut into small cubes
- 2 cups long grain or basmati rice
- 4 tbsp low fat natural yoghurt
