Quick to prepare and really refreshing after a hot summer ride. It will keep for a couple of days in the fridge and is ideal for taking into work.
Here is what you’ll need:
- 500g stir fry pork
- Spray olive oil
- 1 tsp ginger, minced
- 2 tbsp hoisin sauce
- 400g canned mango slices
- 2 cups cooked rice
- ½ red pepper
- ½ yellow pepper
- 125ml lemon juice
- 2 tbsp runny honey
- 1 small fresh chilli, deseeded and chopped
- 300g mixed salad greens
